Nothing keeps spirits alive during winter like wonderful comfort food with deep and layered flavours. Learn to cook your way through the cooler months by mastering key techniques that ensure complex and delicious flavours. Featuring both sweet and savoury dishes and suited to all skill levels, this course is for anyone passionate about good quality cooking. We’ll look at traditional recipes and contemporary techniques to ensure variety and consistency. There will also be helpful tips and tricks to help you bring out the best flavours and textures of seasonal produce.

Course Outline:

  • Ossobuco alla Milanese
  • Risotto alla Milanese and Gremolata
  • Beef Bourguignon
  • Sticky Date Pudding with Salted Caramel
  • Lemon Meringue Tart

Learning Outcomes:

  • Student is able to work conscientiously and safely in the kitchen
  • Student is able to work effectively individually and in a small group
  • Student is familiar with food hygiene practices

  • Student learns to prepare an array of sweet and savoury dishes

What to bring:

  • Apron
  • 3 large containers
  • 1 small container
  • 1 tart tin (approx. 25 cm)
  • 1 large saucepan
  • 1 small saucepan
  • 1 Dutch oven or high edged oven proof casserole dish
  • 1 large high edged frying pan
  • 1 pot
  • 4 small ramekins
  • 2 tea towels
  • Pen

Safety First:

Please ensure you wear closed in shoes, long pants and ensure long hair is tied back.

About the Tutor:

'I’m currently studying a double degree in Medical Science at the University of Sydney with a lifelong obsession of cooking and experimenting in the kitchen.   • To ensure resources are ready for you at the start of your course, we ask you ideally enrol at least one week before the course commences.
  • All courses need a minimum number of students to run (“we try our hardest to get those”) . If your course does not have enough students it will be cancelled prior to the commencement and you will be informed.
