Vegan Mexican Cooking

Vegan food is becoming more and more popular and research is showing us that it’s good for the body and environment to cut down on meat consumption. This course will allow you to get an understanding on some plant based food for some simple and delicious meat free meals. People are becoming more interested in the idea of even cutting out meat just once a week but don’t know where to start. This course will show you some Mexican inspired plant based recipes for you to show off at your next dinner party. Mexican is a favourite for most and cutting out meat can make it confusing as to what ‘fillings’ you should use. The dishes that will be cooked will give some ideas for some healthy and delicious meat free Mexican alternatives.

Course Outline:

  • Learn how to cook three Mexican inspired plant based recipes
  • RECIPE 1: Whole roasted cauliflower with cashew cream
  • RECIPE 2: Pumpkin and black bean tostadas
  • RECIPE 3: Charred Mexican corn & quinoa salad
  • Learn different types of plant based ‘meat’ alternatives
  • Discussion on multiple different Mexican dishes and how to make it plant based

Learning Outcomes:

  • Students will learn how to make plant based Mexican food
  • Students will learn different ways to use vegetables and grains as tasty and easy ‘meat’ alternatives
  • Students will take home recipes that they cook

What to bring:

  • Closed in shoes and an apron
  • Chopping board and sharp knife
  • A medium sized cooking bowl
  • 2 medium sized take away containers

About the Tutor:

'Hanna has worked in hospitality for over 10 years and this is where she found her love of food and cooking. While not always working in kitchens she started her cooking journey on superyachts in Europe when she was asked to assist the Chef and then became the crew cook shortly after. Since then she has worked on superyachts in Sydney as a cook, created a vegan cookbook for a boot camp weight loss program, catered small events and worked with companies as a food stylist/ cook to create beautiful meals for online E books. Hanna believes that cooking can be simple and delicious if you use a little creativity. She loves cooking vegan food because of this aspect and has been working on numerous vegan recipes to convert even the biggest of meat eaters!'

  • To ensure resources are ready for you at the start of your course, we ask you ideally enrol at least one week before the course commences.
  • All courses need a minimum number of students to run ("we try our hardest to get those") . If your course does not have enough students it will be cancelled prior to the commencement and you will be informed.
