Perfect Pastry - New!

Making home-made pastry is a tricky task to master due to the diversity of styles and techniques required. This course will take students step by step through a series of sweet and savoury pastries to help you produce wonderful flavours and textures. By covering fundamental techniques and flavour variations, you’ll be able to produce a diverse range of delicious dishes. We’ll cover flaky pastry, puff pastry and shortcrust pastry. By honing each of these techniques, students will learn wonderful pastry based dishes that can be customised to incorporate a wide array of flavours.

  • Chicken and Leek Pie
  • Roast pumpkin and onion tart
  • Tarte Tatin
  • Mille Feuille

Learning Outcomes:

  • Student is able to work conscientiously and safely in the kitchen

What to bring:

  • Apron
  • 1 ovenproof high edged pie dish
  • 1 small round cake tin
  • 1 tart tin (approx. 23 cm)
  • 1 large high edged frying pan or large saucepan
  • 2 large baking trays
  • 2 tea towels
  • Pen

Safety First:

Please ensure you wear closed in shoes, long pants and ensure long hair is tied back.

  • To ensure resources are ready for you at the start of your course, we ask you ideally enrol at least one week before the course commences.
  • All courses need a minimum number of students to run (“we try our hardest to get those”) . If your course does not have enough students it will be cancelled prior to the commencement and you will be informed.
