Ocean Delights

With such a diverse range of flavours, textures and preparation techniques, a lot of people are not confident in handling and preparing seafood consistently. For the most part, it’s just hard to know where to begin. This course will introduce you to the joys of the sea as we go step by step through everything from buying, preparing and serving incredible deep blue dishes. We’ll be working with a wide variety of fresh produce, revamping old favourites and introducing some contemporary flavours and dinner party show stoppers. This includes a combination of theory and practical learning to ensure you’re well equipped to produce seafood perfection every time.

  • Food preparation, safety and hygiene
  • Preparation and cooking of:
  • Prawns
  • Squid
  • Mussels
  • Fish

Learning Outcomes:

  • Student is able to work conscientiously and safely in the kitchen

  • Student learns to prepare an array of savoury seafood dishes
