Buttercream recipe from the "Australian Women’s Weekly easy Cupcakes by colour"

Butter cream

Add any flavoured essence or extract you like to butter cream. Beat it in with the butter for the best flavour. Any citrus rind can be used. Beat 2 teaspoons finely grated rind with the butter and use the corresponding juice instead of the milk. Butter cream is teh most popular type of frosting, it’s easy to spread and handle. Be aware that it’s cream in colour, so any added colouring will result in the final colour being slightly yellow, particularly pinks and reds.

125g butter, softened
1 1/2 cups (240g) icing sugar
2 tablespoons milk

Beat butter in small bowl with electric mixer unit as white as possible; beat in sifted icing sugar and milk, in two batches. Make 1 3/4 cups
